Blackberry Birthday Smoothie: packed with antioxidants and anthocyanins; the perfect way to celebrate your birthday AND boost your antioxidant intake.
Two weeks have already passed and I’m still not caught up on everything that I intended to do over my little winter break.
AND it’s my birthday week. So, not only am I behind on work, I’m also getting older.
1o years ago my birthday week was a birthday month. And that month was filled with so many fun things. Spending extra time with friends. Celebrating at every opportunity. Having lots of champagne.
These days, I’m lucky that I can still muster up the time and energy to celebrate for one day – let alone a week! Celebrating now means kicking back on the sofa and Netflixing. Or, enjoying my favorite coffee. Or treating myself to a fresh juice and a mani/pedi. Times have surely changed.
At my age, it’s really the little things. Like fresh blackberries.
Over the weekend, my sister gave me 8 pints of fresh blackberries. I’ve been brainstorming ways to use them up including: smoothies, raw blackberry cheesecake and scones.
I started with a smoothie because I couldn’t find raw cashews. I really wanted that cheesecake but it’ll have to wait until later this week.
Blackberries are filled with anthocyanins, which are the compounds that give blackberries their deep, rich color. Anthocyanins are thought to possess anti-inflammatory and anti-carcinogenic activity, they are also touted as an antioxidant rich berry that can prevent cardiovascular disease, obesity and diabetes.
- 3oz fresh blackberries
- 8oz vanilla almond, coconut or soy milk
- ⅓ cup frozen pineapple
- 3 dates
- Toppings: coconut, sprinkles and fresh fruit
- Combine all of the ingredients, except your toppings, in a high power blender.
- Transfer to a bowl or glass, add toppings, and enjoy with a spoon!
This week, my birthday celebrations include lots of blackberries, spending time with one of my best friends (visiting from New Hampshire), a Macklemore and Ryan Lewis concert AND a get together with all of my best friends this weekend.
