A simple weeknight meal that is packed with protein and fiber! Explore Asian pastas are my new weeknight go to!
Most of my readers know I have an affinity for living like an Italian. I blame my honeymoon to Italy and my husband’s wonderful large Italian family. I also have a healthy love of carbohydrates, which is no secret either.
That being said, I can easily eat pasta once, even twice per week. It’s quick, it’s delicious and there are endless sauce options. The one downfall is that pasta is often heavy and very filling. For that reason, zoodles and veggie based noodles are super popular.
Have you ever eaten a bowl of zoodles, only to be hungry a couple of hours later (I can’t be the only one)? Usually this happens more often to vegetarians who don’t add a significant source of protein to their noodle or zoodle dishes.
Thanks to Explore Asian, pasta no longer has to be a carb heavy dish! They’ve reinvented pasta by changing an everyday favorite into a ridiculously healthy and nutritious meal. Explore Asian pastas are made from your favorite vegetarian sources of protein: black beans, mung beans, edamame and soy beans. In fact, the black bean spaghetti has 25g of protein and 12g of fiber per serving, making it a great alternative for all diets and lifestyles (including diabetics).
And then of course, there are the certifications that matter to me:
- Gluten Free
- Kosher Certified
The pasta itself cooks very quickly. I had a meal made of edamame pasta on the table in under 15 minutes. The pasta stays al dente, even if sits for a period of time after cooking. It’s made of simple ingredients (really, just organic beans) sourced from organic farmers in Thailand.
I love Explore Asian because they’ve made a pasta that is power packed with protein for fitness fanatics, healthy lifestyle living and families. They have five delicious varieties to choose from:
- Black Bean Spaghetti
- Soybean Spaghetti
- Edamame Spaghetti
- Edamame Fettuccine
- Mung Bean Fettuccine.
The Edamame Spaghetti is now being sold at most Costco stores in a 2lb box. You know I love Costco. You can also pick up Explore Asian pastas at Whole Foods or Fairway stores.
The holidays are the perfect time of year to eat lighter dinners. We just had a big weekend of celebrations (my dad turned 65!) and a simple edamame pasta dish was just what my body needed.
