Fall veggies are my favorite. This past weekend I stopped at a vegetable market and I was SO excited to see rows of squash and pumpkins, rainbow carrots and piles of yams. It might have helped that we finally got some cooler weather in Florida.
I picked out a beautiful acorn squash with no idea what to do with it. I’m an expert with yellow squash and zucchini; spaghetti squash and I go way back…but acorn? That was new to me.
I roasted my rainbow carrots the night before I tackled the squash and this filling just came together with things I had on hand. It was totally delicious….
